A block of asin tibuok sea salt being grated over a latte at Lavande

The signature

The salt that comes in a clay pot.

Asin tibuok is a sea salt made by a small number of families in Alburquerque, Bohol. Coconut husks are soaked in seawater for months, dried and burned slowly to ash. Seawater is filtered through that ash, and the brine is boiled in small clay pots until each pot holds a solid dome of salt. The pot cracks in the fire. That cracked shell is why the salt arrives looking like an egg in a broken cup.

At Lavande the block sits on the café counter, and a little of it is grated over your drink in front of you. It tastes smoky and faintly mineral, less sharp than table salt. Over ceremonial matcha and steamed milk it works the way salt works on caramel: the bitterness softens and the sweetness reads more clearly. The Asin Tibuok Matcha Latte is ₱500 and the Asin Tibuok Latte is ₱300.

Get directions

Can I come just for coffee?

Yes. The café is its own room with its own menu: specialty coffee, ceremonial matcha, pastries and desserts. You can sit with a friend who is having her nails done, or come only for the drink.

What is the asin tibuok matcha latte?

It is ceremonial-grade Japanese matcha, whisked to order and finished with asin tibuok, a smoked sea salt made by hand in Bohol. The salt is grated over the drink at the counter. It tastes of matcha first, then milk, then a small savoury note at the end.

Do you have oat or other non-dairy milk?

Yes. Full cream, oat, soy and coconut milk are all available, and there is no extra charge for choosing a non-dairy milk in your coffee or matcha.

Does the café serve food?

The counter has pastries from ₱250 and plated desserts at ₱380, alongside coffee, ceremonial matcha and non-coffee drinks. It is a café menu for a drink and something sweet, not a full meal.

When is the café open?

The café keeps the same hours as the nail salon: Tuesday to Sunday, 10 AM to 8 PM, closed on Mondays. It is on the 2nd floor of Manila Bankers Prosperity Tower, 110 Legazpi Street, Legazpi Village, Makati City.
